Single Estate

  • Aroma: Tomato leaf, freshly cut grass, artichoke
  • Taste: Round & strong, green almond, ripe tomato, slightly peppery finish

Our olives grow around Castelvetrano in western Sicily, in the historic acropolis of Selinunte. Our variety is the Nocellara del Belice – one of the most luxurious and limited olive varieties in the world. It is known for its "green" aromas and its elegant bitterness/pungency – precisely what makes this oil so present without being overpowering.

Our olive oil is a true all-rounder in the kitchen. Thanks to its balanced aroma, it pairs perfectly with both hot and cold dishes, for refining, marinating, or as a finishing touch. Whether Mediterranean classics, Asian dishes, or modern fusion cuisine – Nocellara del Belice harmonizes with almost all ingredients and subtly enhances their natural flavors.

Hand-harvested (exclusively early harvest) and quickly processed: cold-pressed within 4 hours. Minimal filtration for more character – therefore the oil may appear slightly cloudy (quality, not a defect).

Yes, olive oil is excellent for frying. It's the most heat-resistant oil of all available oils. Extra virgin olive oil has a smoke point of around 180-210°C, which is perfectly adequate for most frying applications. The antioxidants and polyphenols it contains make it particularly stable at high temperatures.

For whom: Perfect for tastings, travel, as a gift or for the catering industry (e.g. in bread basket service).

Here's how to best use it: Ideal for tasting the oil on its own or enjoying it classically with fresh bread. Also makes an elegant sample size to get to know its character and aroma.

Origin & variety

100 % Nocellara del Belice from Castelvetrano, western Sicily. Our groves lie at the edge of Selinunte; the trees are on average more than 500 years old and are never irrigated.

The Nocellara del Belice grows almost only in the Belice valley. It is known for its green aromas and an elegant bitterness and pungency, present without overpowering. Among more than 550 olive varieties, it is considered the only one with two protected designations of origin: as a table olive and as an oil.

Harvest & processing

Harvested by hand with ladders, always early, while the olives are green. At the mill within four hours and cold extracted, never above 27 °C. Stored and bottled under nitrogen.

We filter only minimally so the oil keeps its character. That is why it may be slightly cloudy. It is a sign of quality, not a flaw.

Domande

Frequently asked questions.

Can I cook and fry with the oil?

Yes. Extra virgin olive oil is heat-stable: its smoke point is around 180 to 210 °C, enough for almost anything you do in a pan. Its natural polyphenols make it particularly stable. Its aromas are at their best raw, though, over the finished dish.

Why is the oil slightly cloudy?

We filter only minimally so the oil keeps its character. A slight cloudiness is therefore a sign of quality, not a flaw.

What does “cold extracted” mean?

At the mill the oil is separated mechanically from water and pulp, at a temperature of no more than 27 °C. This preserves freshness and aroma.

Is the olive oil cold pressed?

People often say “cold pressed”. Strictly speaking, our oil is “cold extracted”: a modern mill separates the oil with a decanter instead of a press, at no more than 27 °C. Under EU law, “first cold pressing” may only be used for traditional presses. What matters for quality is the same: low temperature and fast processing.

How should I store the olive oil?

Cool, dark and tightly closed. It keeps for 18 months from bottling and tastes best in the first months after the harvest.

Which harvest is the oil from?

From the October 2026 harvest, picked by hand in our groves at the edge of Selinunte. We bottle around 1,600 bottles per vintage.

How fast is delivery?

We ship with DHL within 24 hours. Free shipping in Germany from 50 €, otherwise 4,90 €. Shipping within the EU is available.
